Let’s be honest, I felt kind of guilty throwing the Naughty Nog recipe up knowing there was no way in heck it could ever be made vegan!! So I thought I’d do a little something, something that was fit for those who have to live without dairy.
Pumpkin Spice Lattes are all the rage every fall so I figured they would be the perfect place to start. However, I don’t like the coffee shop version at all! This is going to sound crazy coming from me but they are too sweet :/
Yes, I know what you are thinking!! I’d bath in sugar if given the chance! I’d eat dessert for every meal if it were a thing! BUT I don’t like sugary drinks…for the most part…there are some exceptions…I’ve digressed.
Whole point being, I’ve made my version less sweet, more natural, and a touch spicier. Enjoy!

Pumpkin Spice Lattes
(Yield: 6 servings)
2 cups almond-coconut milk
6 oz pumpkin puree
3 Tbsp brown sugar
1 tsp pumpkin pie spice
½ tsp maple syrup
¼ tsp Saigon cinnamon
QS hot coffee
Combine almond-coconut milk, pumpkin puree, brown sugar, pumpkin pie spice, maple syrup, and cinnamon in a medium saucepan over low heat.
Whisk often as you bring to a boil.
As soon as mixture begins to boil around edges, turn heat off, place lid on saucepan, and steep mixture for 20 minutes.
While mixture is steeping, brew a hot pot of strong coffee.
When coffee is ready and 20 minutes is up, create your lattes! Pour as much pumpkin mixture into your mug as you would like and then top it off with hot coffee.
